 EOS 2005 CABERNET SAUVIGNON

The 2005 vintage was as good as it could get. We had an abundance of fruit, more than we had expected, and the quality of the fruit was superb with intense richness in flavor and color. The richness in tannin makes these wines more able to be aged. This will result in softer and more rounded velvety characters over time. The nose of this Cabernet Sauvignon is chock-full of briary blackberries and jam underscored by subtle hints of oak. Loads of dark berries explode on the palate enhanced by rich flavors of  coffee, and molasses.

Food Pairing Recommendations: Serve with Portabella gorgonzola ravioli or Eggplant Rollatini, prime rib or aged cheddar cheese.
